"Peter's Prime" Beef comes from the corn belt region of the Midwest. Our supplier gets the NY Strips and Short Loins from Colorado and Kansas, where it was demonstrated that corn feeding the primary Angus and Hereford Breeds for 100-120 days produce the most flavorful steaks. We then Dry Age(temperature, humidity and air flow) the meat for approx. 7-8 weeks. Due to shrinkage and extra trimming, this process is very expensive, but we believe you will agree it is worth the effort.
